Mussel, Shrimp & okra Gumbo

Ingredients: 

1 sack of cleaned mussels

2 lbs peeled and deveined shrimp

.5 lv lump crab meat

1 lb okra sliced into 1/4 inch rounds

2 sticks butter

2 cups white wine

4 roma tomatoes cut in half, lengthwhuse

2 cups small diced onions

1  cup small iced green bell pepper

1 cup small diced celery

4 tb spicy slap ya mama (red label)

2 bay leaves

1 capful of crab boil

1 packed dried shrimp powder

3 qts shrimp stock

Instructions

Preheat Oven to 375F

 

Place a large gumbo pot over a medium high fire.

 

Add in one stick of butter. Then add all of the cleaned mussels.

Add in 2 cups of white wine and then cover with a lid to allow mussels to steam. 

 

Once mussels open, remove mussels from heat and pot and strain using a fine mesh strainer into a container that can hold the liquid.

 

Take roma tomatoes and p lace on sheet pan with olive oil and roast at 375F for about 10 minutes. Remove tomatoes from oven and blend into a roasted tomato puree. 

In the same pot the mussels were cooked in, place back over medium high heat. Add in butter and all of your trinity vegetables. Begin to sauté until translucent. 

Add in 3 tb of Slap Ya Mama seasoning and a bay leaf.

Add in okra and sautéed vegetables to the seasoning and so that some of the okra slime begins to be released, this will act as a thickener in the gumbo itself.

Add in roasted tomato puree, then add crab boil and dried shrimp powder.

Add in 3 qts of shrimp stock and strained mussel liquor.

bring hte bot a simmer and cook for about 45 minutes.

Season you raw shrimp and crab with 1 tb of Slap Ya Mama.

Add in shrimp and crab to the gumbo post and let gook for 5 minutes more.

Add in the opened mussels and stir. Cook for another 5 minutes.

Serve over white rice.
